Paganini cookies

Amongst such great names of the classical music world like Benjamin Godard(1849-1895), Wolfgang Amadeus Mozart (1756-1791), Gioachino Rossini (1792-1869), Franz Schubert (1797-1828) or Giuseppe Verdi (1813-1901) also a famous Italian violinist and composer Niccolò Paganini (1782-1840) enrolled in the annals of the gastronomy with the forgotten in today’s time cookies with refined preserves surrounded with a meringue wreath.


  • 3 yolks
  • 100 g cornflour
  • 100 g butter
  • 100 g icing sugar
  • 150 g flour
  • 1 level teaspoon of baking powder

  • preserves of forest fruits or cherry
  • 100 g twice grinded almonds
  • 2 egg whites
  • 100 g icing sugar


Knead dough of yolks, butter, flour, icing sugar and baking powder, then cool it.
Whip the egg whites until stiff, add with portions sugar and farther beat until the sugar crystals dissolve. Add with portions grinded almonds and gently mix it.
Round moulds, smeared with butter, about the diameter of 5-6 cm fill with dough 2-3 mm thick.
Fill the inside of the mould with almond filling.
Bake c 25 minutes in the hot oven in 160-170 ° C.
After cooling off garnish cookies with preserves.
